Executive Chef Charles

has 25 years in the business. Experience ranging from weddings to corporate events, holiday parties to Music Festivals. Charles has done it all. We cater parties of 30 and parties of 3000.

Our Executive Chef has traveled the world and nation, tasting different cuisines and honing his skills and techniques. Choose from one of our tried and true menus or let the Chef create the vision and menu you desire!

Sample Menus

Hors d’oeuvres

Salmon Croquettes. Wild Salmon croquettes with poblano pepper aioli and pickled onion.
Steak and potatoes skewer. Seared bavette steak, fingerling potato, ancho chile bbq sauce.
Tortellini Caprese Skewer. Pesto, tortellini, cherry tomato, fresh basil and ciliegine mozzarella.

Entrees

Lemon Thyme Chicken. Wild mushroom brown butter.
Grilled Beef Tenderloin. Rosemary and cabernet jus.
Crispy Skin Salmon. Shallot and thyme burre blanc.
Root Vegetable and Chic Pea Terrine. Balsamic maple reduction.

Desserts

Salted Caramel Brownie. Pulverized pretzel, Ghiradelli chocolate syrup, Jacobson sea salt.
New York Cheesecake. Oregon berry coulis, dark chocolate dust, toasted hazelnuts.
Mini Dessert Variety. Macaroons, trio of truffles, lemon blueberry sauce.
Tiramisu Crumbled lady fingers, Baileys Irish whipped cream, edible flowers.
